Cashew, Cacao & Vanilla Energy Balls

I love creating easy to make and nutrient dense energy balls. They do not need cooking and can be prepared in advance and stored in the freezer for a few weeks ready for when you need them for your children or for yourself.  Just defrost them in the fridge overnight in time for a quick breakfast or morning snack.

The cashew, cacao & vanilla energy balls contain the following nutrients and plant polyphenols with antioxidant, anti-inflammatory, cardio-protective, brain (neurone), immune and energy supportive properties as well as providing essential food for the beneficial gut microorganisms (soluble fibre and prebiotics: pectin, mucilage, resistant starch) and insoluble fibre (cellulose, hemicellulose and lignin) for bowel motility and stool quality :
